Healthy Anzac Biscuits

With a few simple ingredient substitutions, this recipe produces yummy Anzac biscuits with 42% less calories, 37% less fat, 64% less saturated fat, 47% less carbohydrates, and 22% less sugar!

Nutrition: per biscuits, recipe makes 30 biscuits.

70 calories, 3.6g fat, 1.4g sat fat, 7.5g carbs, 5.1g sugar

Ingredients:

1 cup rolled oats

1 cup almond meal

1/2 cup dessicated coconut

1/2 cup brown sugar

2 Tablespoons golden syrup

150g ultra light margarine (we used Flora)

1 tsp baking powder

2 tbsp water

Method: 

Pre-heat oven to 180 degrees.

Combine oats, almond meal, coconut, and sugar in a bowl.

In a pan on low heat, gently melt together golden syrup, margarine, and water, then add baking powder (it’s fine if it gets a little foamy).

Add this melted mixture to dry ingredients, mix together, and then spoon onto baking tray, you should get 30 biscuits.

Flatten them with a spoon and remember they will expand so space them accordingly.

Bake for 10-15 minutes until golden.
