Chilli Con Carne

CHILLI Easy, fast, and nutritious, this recipe will soon become a favourite! Simple ingredients and a bit of spice will be sure to warm you from head to toe. Ingredients: 1 onion, roughly chopped 2 garlic cloves 2 tsp chilli powder 1 tsp ground cumin 1 tsp dried coriander (or handful of fresh) 500g lean beef mince 1 can of tinned tomatoes 1 can kidney beans, drained 1 courgette 1/2 red pepper 1/2 orange/green pepper 2 tablespoons tomato paste 2 cups water   Method: Using spray oil in a non stick pan, cook onion and garlic on a medium heat until soft. Add mince, herbs and spices, stir together and cook until mince has browned. Add all remaining ingredients, bring to the boil, and then simmer on a low heat until vegetables are just cooked. Season with salt/pepper to taste. Done! How easy was that!
