CHILLIEasy, fast, and nutritious, this recipe will soon become a favourite! Simple ingredients and a bit of spice will be sure to warm you from head to toe.Ingredients:1 onion, roughly chopped2 garlic cloves2 tsp chilli powder1 tsp ground cumin1 tsp dried coriander (or handful of fresh)500g lean beef mince1 can of tinned tomatoes1 can kidney beans, drained1 courgette1/2 red pepper1/2 orange/green pepper2 tablespoons tomato paste2 cups water Method:Using spray oil in a non stick pan, cook onion and garlic on a medium heat until soft.Add mince, herbs and spices, stir together and cook until mince has browned.Add all remaining ingredients, bring to the boil, and then simmer on a low heat until vegetables are just cooked. Season with salt/pepper to taste.Done! How easy was that!
