Soy sauce chicken

Love chicken wings, but trying to watch your weight? This recipe is for you!

A more sophisticated and delicately flavoured alternative to honey soy chicken wings, and an excuse to open a bottle of wine with company!

Ingredients:

1 kg chicken wings

2 tablespoons oyster sauce

3/4 cup soy sauce

1.5 cups of water

2 tablespoons sugar

1/3 cup dry white wine

3cm knob of ginger, sliced

1 garlic clove

3 shallots, chopped

1/2 tsp cinnamon

1 star anise

1 teaspoon black peppercorns


Method:

1: Remove wing tips, skin, then cut to separate into wingette and drumette.

2: Place all ingredients but the chicken in a large bowl. Stir to combine.

3: Add the chicken let marinate for 20 minutes.

4: Stir the chicken, distributing marinate evenly throughout, and then let marinate for another 20 minutes.

5: Place a pan on the stovetop and heat to a high heat. Add the marinated chicken.
Reduce the heat to simmer, cover and let cook for 15 minutes.

6: Turn the chicken over, cover and continue cooking for another 15 minutes or until cooked but still juicy.
