Love chicken wings, but trying to watch your weight? This recipe is for you!A more sophisticated and delicately flavoured alternative to honey soy chicken wings, and an excuse to open a bottle of wine with company!Enjoy!
Serves 4

Ingredients:1 kg chicken wings2 tablespoons oyster sauce3/4 cup soy sauce1.5 cups of water2 tablespoons sugar1/3 cup dry white wine3cm knob of ginger, sliced1 garlic clove3 shallots, chopped1/2 tsp cinnamon1 star anise1 teaspoon black peppercorns
Method:1: Remove wing tips, skin, then cut to separate into wingette and drumette.2: Place all ingredients but the chicken in a large bowl. Stir to combine.3: Add the chicken let marinate for 20 minutes.4: Stir the chicken, distributing marinate evenly throughout, and then let marinate for another 20 minutes.5: Place a pan on the stovetop and heat to a high heat. Add the marinated chicken. Reduce the heat to simmer, cover and let cook for 15 minutes.6: Turn the chicken over, cover and continue cooking for another 15 minutes or until cooked but still juicy.
