Ingredients: 1.5 cups wholemeal flour 1/2 cup light milk 1/2 cup granulated Stevia (natural sweetener) 1/4 cup apple puree 1 tsp bicarb 1 tsp lemon juice 2 tsp cinnamon 1 tsp mixed spice 1 tsp vanilla extract 1 egg 1/3 cup sultanas (or currants) Method: Pre-heat oven to 160 degrees. Mix together all ingredients except the flour and sultanas, mix for 1-2 mins until frothy. Then add sultanas. In another bowl, add flour and then make a well in the middle, and pour in the batter mix into the middle. Fold together with a wooden spoon until just combined. Spoon evenly into 6 muffin cases in a tray, smoothing the tops with a spoon to make them as even as possible. Sprinkle a few tablespoons of flour onto a cutting board, make a well, and add enough water to form a soft dough, kneading gently.
