At only 144 calories, and 25.5g of carbs, they are a high fibre diabetes and heart friendly healthy alternative that only takes 20 minutes to whip up!

144 calories, 1.8g fat, 0.5g saturated fat, 25.5g carbohydrate, 8g sugar, 4.9g protein.
Ingredients:
1.5 cups wholemeal flour
1/2 cup light milk
1/2 cup granulated Stevia (natural sweetener)
1/4 cup apple puree
1 tsp bicarb
1 tsp lemon juice
2 tsp cinnamon
1 tsp mixed spice
1 tsp vanilla extract
1 egg
1/3 cup sultanas (or currants)
Method:
Pre-heat oven to 160 degrees.
Mix together all ingredients except the flour and sultanas, mix for 1-2 mins until frothy. Then add sultanas.
In another bowl, add flour and then make a well in the middle, and pour in the batter mix into the middle.
Fold together with a wooden spoon until just combined.
Spoon evenly into 6 muffin cases in a tray, smoothing the tops with a spoon to make them as even as possible.
Sprinkle a few tablespoons of flour onto a cutting board, make a well, and add enough water to form a soft dough, kneading gently.
Roll this out with a rolling pin, and then cut out strips roughly the size of the muffin width.
Place strips gently across the tops of the muffin batter to make a cross.
Bake for 15 minutes, enjoy warm straight out of the oven, or freeze for later dates. Enjoy!
