Garlic and chilli BBQ skewers

These mouthwatering prawn skewers strike that perfect balance, and are guaranteed to be a hit at your Christmas lunch.

Serve as is as finger food, or use to give your salad that something special.


Serves 4


3 garlic cloves, finely chopped
1 long red chilli, seeded and finely chopped
2 tablespoons olive oil
2 teaspoons lime juice
Salt and cracked black pepper
750g raw king prawns, peeled, deveined, tails intact
Lime wedges, to serve


1: Place all ingredients apart from prawns in a large bowl and whisk until well combined. Add the prawns and toss to coat evenly. Cover and refrigerate for 15 minutes.
2: Heat a barbecue grill plate to high. Thread marinated prawns onto metal or bamboo skewers.
3: Serve skewers with lime wedges if desired.
